Healthy Lunch Ideas
Though I love a peanut butter and jelly sandwich, on homemade bread, it is nice to have a little variety at lunchtime! The following are a few healthy, and affordable lunch choices, that we enjoy, on occasion:

Humus~ Store-bought humus is expensive, but can be made for less than a dollar, with dried garbanzo beans. Simply soak garbanzo (or other) beans , overnight. Simmer till cooked, the next day. Drain beans and put in food processor or a blender, along with a bit of water and olive oil. Puree till smooth and enjoy! Enjoy with crackers or toasted pita bread.

Sampler~ We use divided lunch trays from Walmart (.98 each) for a fun lunch sampler. Children love having a variety of lunch items. Choose from carrot sticks and dip, grapes, cheese slices, peanut butter on banana slices, applesauce, and yogurt to place in the various compartments. If you do not have the divided lunch trays, simply fill a variety of bowls and plates with snacks for them to sample. This can even be brought outside to enjoy, picnic-style.

Soup~ Make a large batch of soup, early in the morning (or the night before), in your crockpot, and enjoy it for lunch, as well as dinner.

Leftovers, soup, quesadillas, variety of sandwiches, macaroni and cheese, toast and fresh fruits and veggies, etc. Sometimes mini pizzas.

I do find that lunch is not such a hard thing to come up with anymore. I think I am finally getting my groove down. LOL

Thanks for the ideas, Christine! I need to make some egg salad. I love it and I'm sure my children will too.

I have a question for you. I'm not pregnant, but I've been thinking lately that I would like to shoot for a natural birth next time (if/when the Lord chooses to bless us again!). We took Bradley classes with our first pregnancy, and we learned a lot, but to be completely honest we were pretty turned off by the New Age/hippie element that was very present. I'm sure that the instructor had a lot to do with that...as far as I can tell it is not a part of the Bradley method. (I did not have a natural birth, but it wasn't because of that. It was because of a long,horrific labor and delivery.) Anyway, every time I go into labor I flip out and think that it's going to be just as bad as the first time. And it never is.

So, do you have any links to good, reliable sites that have info on the dangers of epidurals and that sort of thing? I've wondered how many epidurals one can have. I've had five now, and while I've never had any bad experiences or side effects, I think I'd like to start moving away from them. I'm not interested in a homebirth right now (they're actually illegal in GA, and the midwives here can get into pretty big trouble for doing them), but my doctor is wonderful and is very supportive of natural birth and natural things in general. As is the hospital that I deliver in. They see a good many natural deliveries there, so the nurses are used to it and know how to help, etc.

Anyway, I know you're a busy Mama, but if you get an extra minute I'd love to get your input. :)
